Chorizo Carbonara

1/2 pound of Mulay’s Chorizo; cooked and crumbled
1 cup of half and half
2 cups shredded Monterey Jack cheese with peppers
1 4 1/2 ounce can chopped green chiles
1/2 teaspoon ground cumin
1 16 ounce package of spaghetti, cooked

Heat the half and half in a small saucepan. Combine the half and half, sausage, cheese and the remaining ingredients in a large bowl, tossing until the cheese melts. Serve immediately over spaghetti.   Makes 8 servings
